In one of our previous blog posts on QuoteSearcher, we told you about the Government’s healthy eating scheme, Change 4 Life, which was slammed by nutritionists due to the packet sauces that were added as part as the recipe. Here’s one that sounds good to us!
This east to cook recipe serves 4 people and makes the most of fresh seasonal vegetables.
Preparation time is 20 minutes, cooking time is 15 minutes and the approximate cost for the recipe is £3.72, according to Change 4 Life.
1 red (or regular) onion, finely sliced
2 celery sticks, sliced
1 large carrot, cut into matchstick size
1 red or yellow pepper, de-seeded and finely sliced
250g extra lean minced beef
1 small onion, finely chopped
2 tsp mixed dried herbs
Ground black pepper
3 tsp vegetable oil
2 tbsp sweet chilli sauce
100g mushrooms, sliced
100g spring greens or cabbage, finely sliced
Mix the minced beef with the dried herbs and finely chopped onion then season with black pepper. Next, form the mince into 20 small meatballs. To avoid getting the mixture stuck on your hands, make sure they are damp.
Heat 1 tablespoon of vegetable oil in a large frying pan or wok. Add the meatballs and fry for 7-8 minutes. Then put them into a bowl, add the sweet chilli sauce and stir to coat them, before putting them aside.
Give the wok or pan a wipe with kitchen paper then add and heat the remaining 2 tablespoons of oil, then add the carrot, onion, celery and pepper. Stir fry for approximately 3-4 minutes then add the mushrooms and cabbage or spring greens and stir fry for another 2 minutes.
Next, return the meatballs to the pan or wok and stir fry for a few moments. Your mini meatballs stir fry is ready to be served. You can serve with rice if you fancy it.
You can also use turkey or lean minced pork to make the meatballs.
