A Change 4 Life Mini Meatballs Stir Fry Recipe

In one of our previous blog posts on QuoteSearcher, we told you about the Government’s healthy eating scheme, Change 4 Life, which was slammed by nutritionists due to the packet sauces that were added as part as the recipe. Here’s one that sounds good to us!

This east to cook recipe serves 4 people and makes the most of fresh seasonal vegetables.

Preparation time is 20 minutes, cooking time is 15 minutes and the approximate cost for the recipe is £3.72, according to Change 4 Life.

Ingredients:

1 red (or regular) onion, finely sliced
2 celery sticks, sliced
1 large carrot, cut into matchstick size
1 red or yellow pepper, de-seeded and finely sliced
250g extra lean minced beef
1 small onion, finely chopped
2 tsp mixed dried herbs
Ground black pepper
3 tsp vegetable oil
2 tbsp sweet chilli sauce
100g mushrooms, sliced
100g spring greens or cabbage, finely sliced

Method:

Mix the minced beef with the dried herbs and finely chopped onion then season with black pepper. Next, form the mince into 20 small meatballs. To avoid getting the mixture stuck on your hands, make sure they are damp.

Heat 1 tablespoon of vegetable oil in a large frying pan or wok. Add the meatballs and fry for 7-8 minutes. Then put them into a bowl, add the sweet chilli sauce and stir to coat them, before putting them aside.

Give the wok or pan a wipe with kitchen paper then add and heat the remaining 2 tablespoons of oil, then add the carrot, onion, celery and pepper. Stir fry for approximately 3-4 minutes then add the mushrooms and cabbage or spring greens and stir fry for another 2 minutes.

Next, return the meatballs to the pan or wok and stir fry for a few moments. Your mini meatballs stir fry is ready to be served. You can serve with rice if you fancy it.

You can also use turkey or lean minced pork to make the meatballs.

Spooky Pumpkin Face Biscuits

If you are looking for a fun Halloween recipe to make with the kids, then why not try baking spooky pumpkin face biscuits?

You’ll need the following ingredients –

Finely grated zest 1 medium orange
175g plain flour
50g icing sugar
140g softened butter

For the filling –

25g plain melted chocolate
1tbsp icing sugar

For the glaze-

100g mascarpone
50g icing sugar

Method

1. Preheat the oven to 180C/gas 4/ fan 160C. Place the butter in a bowl and beat with a wooden spoon until smooth. Next, add the icing sugar, orange zest and flour and beat together to make a soft dough. Then knead into a ball and wrap in cling film before chilling for approximately 1 hour.

2. On a lightly floured surface, roll the dough out to a thickness of about 3mm. With a plain cutter (7.5cm), cut approximately 24 circles and put them on a couple of baking sheets.

3. Cut out Halloween faces of 12 of the circles using a small sharp knife. Then gather up the spare dough and make pumpkin stem shapes, trimming them if needed with a sharp knife. Press to the top of each biscuit with a knife to join. Make lines on the face biscuits to look like markings on a pumpkin. As the cookies expand slightly in the oven, use the edge of a biscuit cutter or a knife to cut the pumpkin lines deep into the dough to make sure the lines don’t smooth out while baking. Even though this is an easy recipe to make and you won’t be needing restaurant insurance for your kitchen, be careful with sharp objects around small hands helping you out!

4. Bake the biscuits until pale golden, for around 15 min. Leave to set, then cool the them completely on a wire rack.

5. Mix the glaze ingredients to make a running, smooth icing, adding a little more juice if needed, then set aside. For the filling, beat the icing sugar with the mascarpone, then stir in the cool, melted chocolate.

6. Spread the filling over the cooled plain biscuits, then place the biscuits with the faces on top then brush with the glaze.

You could try decorating the cookies with sprinkles or could leave the mascarpone out if you just fancy some plain biscuits. A perfect treat for trick or treaters!

BBQ Ribs for the Summer

The QuoteSearcher team love a barbeque! So far, the weather in August is proving mostly positive for a BBQ summer in Britain (although we should be keeping our umbrellas at hand). We do love our burgers and sausages, but if you need ideas for a finger licking good BBQ ribs recipe then read on.

Ingredients

For the ingredients, you’ll need 12 pork spare ribs. To make the sauce, you’ll also need salt and freshly ground black pepper, 2 tablespoons of olive oil, 1 finely chopped onion, 1 tablespoon of ground cumin, 3 finely chopped garlic cloves, 2 x 400g cans of chopped tomatoes, 2oz/50g of light muscovado sugar, 1 tablespoon of tomato puree, 4 tablespoons of malt vinegar, 2 tablespoons of Chinese five spice powder and 3 tablespoons of Worcester sauce.

Method

To make your homemade sauce, heat the oil in a saucepan and add your chopped onion. Fry for around 3-4 minutes until the onion has softened, then stir in the rest of your ingredients. Mix the ingredients in well and bring to the boil. Reduce the heat and simmer for about 30 minutes, stirring occasionally until the sauce has thickened.

Next, depending on the thickness of the meat, place the ribs on the barbeque for about 10-15 minutes. Brush the homemade sauce onto the ribs liberally every few minutes until they have a sticky, thick coating, and then serve!

Enjoy a Refreshing Watermelon Recipe this Summer

Watermelon is perfect for the summer. It makes a nice refreshing snack whether you are relaxing in the garden or sunbathing on the beach.

Another couple of ideas of what you could do with watermelon include making a watermelon granita (which is similar to sorbet) or a delicious juice. The recipes are simple to follow so you don’t need to be a top chef with restaurant insurance to make these! Interested? Read on.

Watermelon Granita

A nice way to use your ripe summer fruit, is to make a watermelon granita. A granita is similar to sorbet. Instead of churning it in an ice cream maker, it’s chilled in the freezer and every so often mixed with a fork to make crunchy, sticky, crystal-like granules.

To make a watermelon granita, you’ll need a watermelon with its white pith and seeds removed, 1 punnet of ripe strawberries, 1 tbsp rose water, 1 tsp sea salt, 1 cup (240ml) water and 1 cup (225g) caster sugar.

First, chop the watermelon into small pieces, removing the seeds as you go along and chop up the strawberries. Place both the fruits into a blender with the salt and puree until smooth.

Over a medium heat, heat the sugar and water in a saucepan and bring to the boil. Then turn down and cook for 3 minutes before removing from the heat and allowing to cool down completely.

Stir the fruit juice along with the rose water once the sugar syrup has cooled. Pour into a roasting tray and place in the freezer.

After chilling for half an hour, drag a fork through the ice, working outside in (the outside will begin to freeze before the centre of the dish). You’ll need to continue to do this every half-hour until you have a set ice that is crystalline and has a rough texture. Serve in a chilled glass.

This recipe makes around 8 portions, enough to enjoy the summer with a few of your friends!

Watermelon juice

Watermelon juice is one of those drinks which we’ve experienced when on holiday, but not usually in the UK. It’s such a refreshing drink that’s easy to make.

The ingredients you’ll need include 1 watermelon, the juice of 1 lime, 1 cup (240ml) water and 1 cup (225g) sugar.

Cut open the watermelon in half and scoop out the flesh, removing the seeds as you go along.

Heat the sugar and water in a small saucepan over a medium to low heat. Then stir until the sugar has dissolved. Remove the pan from the heat and allow it to cool at room temperature.

While it’s cooling, put the watermelon in a blender until it’s smooth and strain through a sieve into a bowl.

Add the lime juice to the syrup and stir thoroughly. This recipe makes 3 pints of juice and should be served with ice. It’s makes a well chilled drink for a nice summer’s day or evening.
